Description

I was thinking about how I hadn't had one of my favourite salad's in many years one night when planning a dinner on the weekend. I took the next day off from work and lo and behold I happened to switch the telly on during a cooking show in which they were making the sort of bean salad I was thinking of. I've made a few changes but I still call it Geoff's Bean Salad.

Ingredients

1 cn
Borlotti Beans
1 cn
Mixed Beans (Lima, Kidney, Pinto, Great Northern etc.)
1⁄2 c
Coriander (Fresh, chopped)
1⁄3 c
Parsley (Fresh, chopped)
1⁄8 c
Marjoram (Fresh, chopped)

Red capsicum (Diced)
1
Spanish onions (Small, chopped. Also called Red Onions)

Spring onions
2 T
Golden syrup
2 T
Dijon mustard
4 T
Apple cider vinegar
1 T
Lemon juice
1⁄2 t
salt (to taste)
1⁄2 t
Black Pepper (to taste)
2 T
Flax seed oil (Optional, but very healthy)

Instructions

Put lemon juice on Spanish Onion. This will make it go lovely and pink, and give it an interesting flavour

Put herbs, beans, onion and capsicum in large bowl.

Stir golden syrup, mustard, apple cider, oil and salt and pepper together well in small bowl.

Pour dressing over other ingredients, mixing well.

Best if covered with tea towel in fridge or cool spot for a little while to soften the herbs.
